Vegetable Kofta Curry is fried vegetable balls curry. You can use your choice of vegetables to make Vegetarian Kofta.

Serves: 4-5 People

Vegetable Kofta CurryIngredients:

For Vegetarian Kofta:

5 Potatoes
2 carrots
1 courgette (zucchini) or bottle gourd (also known as lauki, dudhi or ghiya)
2 tablespoon rice flour
2 tablespoon gram flour
1 teaspoon sugar
1 teaspoon chaat masala
1 teaspoon garam masala
1 teaspoon crushed peppercorn
2 green chillies
1 tablespoon chopped coriander leaves
oil for deep fry
salt to taste

For Vegetarian Kofta Gravy:

3 large onions
3 tomatoes
1 teaspoon garlic paste
1 teaspoon ginger paste
1 cup Yogurt
1 teaspoon chilli powder,
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon sugar
2 tablespoon oil
1 tablespoon chopped coriander leaves for garnish
salt to taste
water as needed

Cooking Method:

1. Boil the potatoes, peel and mash it.

2. Grate the courgette (zucchini) or bottle gourd (lauki, dudhi or ghiya for dudhi kofta curry).

3. Chop the green chillies.

4. To make vegetable Koftas, mix mashed potatoes, grated courgette (zucchini) or grated bottle gourd (lauki, dudhi or ghiya), crushed peppercorn, salt, chopped green chillies, chopped coriander leaves, rice flour, sugar, chaat masala, garam masala and gram flour.

5. Take a size of a walnut in your palm from the veg kofta mix and roll out into small balls of vegetable kofta and deep fry all veg kofta.

6. Boil the onions and tomatoes. Remove the tomato skin and grind onions and tomatoes together. Make a smooth paste.

7. For the gravy, Heat the oil in a pan, add garlic-ginger paste. stir it for few mins.

8. Then add the onions-tomatoes paste, cook for few mins.

9. Now add all spices chilli powder, turmeric powder, coriander powder, garam masala and salt. Let it cook covering the lid for 8-10 until all spices are cooked.

10. Add yogurt, sugar and some water. Cook until the gravy becomes little thick.

11. Turn off the heat. Place vegetarian kofta in serving plate and pour gravy on the top and garnish with chopped coiander.

Serve Hot veg kofta curry recipe with Parathas or chapattis or naan breads.
