Vegetable Khichdi Recipe is a one pot meal, a combination of various vegetables, spices, rice and dal.

Vegetable Khichdi Recipe


1 cup rice (any)
1 cup moong dal (mung dal)
2 medium potatoes
2 medium onions
2 carrots
2 green chillies
1 tablespoon garlic-ginger paste
½ teaspoon chili powder
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1-2 bay leaves
3-4 green cardamoms
2-3 cloves
1 inch cinnamon stick
2 tablespoon ghee (clarified butter) or oil
Salt to taste
Water as needed

Vegetable Khichdi Recipe

Cooking Method:

1. Now wash the rice and soak under water for 30 mins, keep aside.

2. Dry roast the moong dal (mung dal) until it turns to lightly brown.

3. Chop the onions. Peel the potatoes and carrots and chop them roughly. Chop the chillies.

4. Heat the ghee or oil in a large pan or a pressure cooker. Add the cumin seeds. When the seeds crackle, add bay leaves, cloves, cinnamon Stick, cardamom and stir for few secs.

5. Now add garlic-ginger paste, chopped chillies and mix well. Let it cook for 2-3 mins.

6. Add the chopped onions, chopped potatoes, chopped carrots and peas and sauté for 3-4 minutes.

7. Add red chilli powder, turmeric powder and salt. Stir well and cook for 2-3 mins.

8. Now add dry roasted moong dal (mung dal) and soaked rice along with water. Mix well and add water (about 3-4 cups, depends how runny khichdi you want).

9. Bring it to boil and then simmer with the lid on. Let the vegetable khichdi cook until dal and rice are cooked (around 15-20 mins) with covering the lid. If you are using pressure cooker, pressure cook the vegetable khichdi on low heat for 2-3 whistles.

10. Let the vegetable khichdi stand for 5 mins.

Serve vegetable khichdi hot with curry sauce or as it is.

Variation Tips:

You can use any vegetables to make Vegetable Khichdi Recipe.
