Vegetable Kebabs Recipe (Tandoori Grilled Broccoli and Cauliflower Kebabs Recipe) is a great alternative of non-vegetarian kebab recipe. Vegetable Kebabs Recipe is chargrilled or ovengrilled marinade vegetables.

Vegetable Kebabs Recipe

Ingredients:

1 small broccoli
1 small cauliflower
For the marinade:
2 tablespoons gram flour (besan)
½ cup yogurt
2 tablespoons lemon juice
2 tablespoons oil
1 tablespoon garlic paste
1 tablespoon ginger paste
1 teaspoon garam masala
1 teaspoon red chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
½ teaspoon cumin powder
Some bamboo skewers
Salt to taste

Tandoori Grilled Broccoli and Cauliflower Kebabs Recipe

Cooking Method:

1. Soak bamboo skewers in water for at least 30 mins.

2. Cut the broccoli and cauliflower into large florets. You should have 6 florets (about 2 cups) each of broccoli and cauliflower.

3. Bring the water to boil in a pan. Add the salt and add the broccoli and cauliflower florets. Bring it back to a boil. Cook them for 30 secs. Turn the heat off and drain the broccoli and cauliflower. Run the cold water to avoid boiling in the steam. Drain well or pat dry them.

4. Heat the oil in a pan. When the oil heated, turn the heat off and add turmeric powder and chilli powder. Stir well.

5. Take the yogurt in mixing bowl, add all ingredients from marinade list and oil mixture as well. Whisk and mix well together.

6. Add the broccoli and cauliflower florets to the marinade. Mix gently and coat well each floret. Keep in refrigerator for about 30 mins.

7. Arrange all florets on skewer.

8. Grill the Broccoli and Cauliflower Kebabs C until they chargrilled on each side.

Serve vegetable kebabs recipe hot with mint yogurt chutney or any chutney or dip.

Variation Tip:

You can use any vegetable like onions, tomatoes, peppers (all different colour), etc… Cut them in wedges shape and follow the above steps to make vegetable kebabs recipe.
