Vegetable Jalfrezi is a mixed vegetable curry. It is a simple main dish and Jalfrezi is easy to cook. It can be used as a side dish as well.

Cooking time: App. 40 Minutes
Serves: 4 people

Vegetable JalfreziIngredients:

2 medium size potatoes
2 carrots
50 gram French beans
100 gram cauliflower
1 green pepper
2 medium size onions
2 medium tomatoes
1 teaspoon red chilli powder
1 tablespoon lemon juice
1 teaspoon cumin seeds
1 tablespoon coriander powder
½ teaspoon turmeric powder
1 teaspoon garam masala
1 tablespoon chopped coriander
2 dried whole red chillies
1 teaspoon sugar
1 tablespoon oil
Salt to taste
Water as needed

Cooking Method:

1. Peel the potatoes and cut in small cubes.

2. Cut the cauliflower in small pieces.

3. Peel the carrots and cut it in long finger chips shapes.

4. Cut the bottom and top end of French beans.

5. Boil all these vegetables for 10 mins.

6. Cut the onions in rings and separate it from each other.

7. Cut green pepper in small squares.

8. Chop the tomatoes.

9. Heat the oil in the pan and add cumin seeds and wait until it crackles, then add red chillies.

10. Add onion rings (keep 4-5 rings aside for garnish) and cook it for 2 mins.

11. Now add all spices garam masala, red chilli powder, turmeric powder, coriander powder and chopped coriander. Cook it for 2 mins and keep stirring.

12. Add chopped tomatoes, green peppers, salt, lemon juice and sugar and cook it for another 3-4 mins until tomato is nicely cooked.

13. Now add all boiled vegetables, stir it and cook it for 3-4 mins. Then add some water (around 1 cup, it depends how much you want gravy) and cook it for 5-7 mins.

14. Finally, turn off the heat and garnish with onion rings.

Serve hot with Naan bread or Chapatti or Rice as a side or main dish.
