Vegetable Dum Biryani is cooked with vegetables with the dum process (a traditional biryani cooking method).

Cooking Time: Appr. 30 Minutes
Serves: 3-4 People

Vegetable Dum Biryani

Ingredients:

1½ cup basmati rice
2 medium onions, sliced
2 medium carrots cut in 2-3 inch pieces
10-12 small button mushrooms cut in halves
½ cup french beans, cut in ½ inch pieces
12-15 cauliflower florets
1 cup green peas
1 green pepper (capsicum), cut in 2-3 inch pieces
8 green cardamoms
10 cloves
5-6 peppercorn
1 inch cinnamon stick
1 Bay leaf
1 teaspoon cumin seeds (jeera) or caraway seeds (shahi jeera)
2 tablespoons mince ginger and garlic
1 teaspoon Turmeric powder
1 teaspoon Red chilli powder
1 tablespoon Coriander powder
1 cup tomato puree
1 teaspoon Garam masala powder
3-4 tablespoon butter/ghee/oil
Salt to taste

For garnishing:

½ cup yogurt
3-4 tablespoon milk
1 teaspoon rose water
A few saffron (kesar) strands
¾ cup cashew nuts
2 medium onions, sliced
1 tablespoon oil
2-3 tablespoon chopped coriander leaves
20 fresh mint leaves

Vegetable Dum Biryani

Cooking Method:

1. Soak the basmati rice for half an hour. Boil the rice in four cups of salted boiling water with two green cardamoms and five cloves until three-fourth done. Drain the excess water and run the cold water to avoid getting cooked in steam. Set aside.

2. Boil the mushroom, french beans, cauliflower florets and green peas for 3-4 mins.

3. For garnishing, Whisk the yogurt and milk with rose water and saffron. Heat the non-stick pan and roast the cashew nuts until it get lightly brown. Fry the onion slices with oil in same frying pan until it gets brown on medium heat. Keep stirring continuously to avoid burning.

4. Heat the butter/ghee/oil in a large pan. Add cumin seeds or caraway seeds. When seeds crackle, add the remaining green cardamoms, cloves, peppercorn and cinnamon and bay leaf. Stir for few secs.

5. Then add garlic-ginger mince and stir for few mins. Add onion slices. Stir and cook until onion start getting transparent.

6. Add the carrot and green pepper (capsicum). Cook for 2 mins.

7. Then add all boiled vegetables. Add salt and mix well.

8. Add turmeric powder, red chilli powder and coriander powder and cook for 3-4 mins.

9. Add tomato puree and garam masala powder to the vegetables and mix well. Simmer for two minutes.

10. Dum process in the oven (biryani in oven): Place a layer of rice in baking tray. Add vegetable, Sprinkle half chopped coriander and place half mint leaves. Add half yogurt mix, half fried onions and half cashew nuts. Repeat this process for second layer with remaining rice and vegetables with remaining garnishing ingredients. Seal the tray with kitchen foil and Place the tray in to the preheated oven on high heat for 5 mins. Let the vegetable dum biryani stand for 10 mins.

Dum Process on the stove top: Place a layer of rice in big pan. Add vegetable, Sprinkle half chopped coriander and place half mint leaves. Add half yogurt mix, half fried onions and half cashew nuts. Repeat this process for second layer with remaining rice and vegetables with remaining garnishing ingredients. Seal the pan keeping lid with wheat dough by sticking on the edge or keep heavy weight on the lid, so there is no escape for steam. Cook on high heat, keep the pan on side not in middle for 2 mins. Change the pan to other side and cook for 2 mins. Cook for a minute on leaving pan on middle. Let the vegetable dum biryani stand for 10 mins.

Serve  the Vegetable Dum Biryani Recipe hot with salad or raita.
