Thai Red Curry Chicken Recipe is hot chicken curry recipe from Thailand.

Cooking Time: Appr. 40 minutes
Serves: 4 People

Thai Red Curry Chicken Recipe

Ingredients:

2 large chicken breasts
4 tablespoons red Thai curry paste
1 tablespoon oil
1 tablespoon Palm sugar or jaggery
100g sugarsnap peas (mangetout)
200g french green beans
5-6 Fresh Kaffir lime leaves, torn into pieces
1 canned Coconut milk
300g Sliced Bamboo Shoots
2 tablespoon of Thai fish sauce (optional)
Handful of chopped coriander leaves

Thai Red Curry Chicken Recipe

Cooking Method:

1. Cut the chicken breast in small pieces.

2. Trim the both ends of French green beans and sugarsnap peas (mangetout).

3. Thinly slice the bamboo shoots.

4. Heat the oil in the wok. Add the chicken pieces and cook for 2-3 mins.

5. Add garlic-ginger paste and add the French green beans and sugarsnap peas (mangetout). Cook for 2-3 mins.

6. Pour the coconut milk into a wok. Bring to a boil over medium high heat, stirring constantly.

7. Add the curry paste and stir until red oil comes to the surface.

8. Add the lime leaves. Season with fish sauce, palm sugar or jaggery and salt and bring it back to a boil. Simmer

9. Garnish Thai red curry chicken recipe with chopped coriander.

Serve Thai red curry chicken recipe with Thai jasmine rice.

Variation Tips:

You can add other vegetables like aubergine (eggplant), mushrooms, baby corn, etc…
