Vegetables In Peanut Coconut Curry Sauce is simple but delicious vegetable curry.

Cooking Time: Appr. 30 Minutes
Serves: 4 People

Vegetables In Peanut Coconut Curry Sauce

Ingredients:

Vegetables:

200g French beans
200g mangetout
200g sugar snap
200g broccoli florets
200g button mushrooms

For The Peanut Coconut Curry Sauce:

1 tinned coconut milk
¼ cup unsalted roasted peanuts
1 red pepper
1 fresh red chilli (add more for hot recipe)
4 garlic cloves
1 medium red onion
1 tablespoon lemon juice
1 tablespoon curry powder
3 tablespoon oil
Some peanuts for garnishing
Salt to taste

Vegetables In Peanut Coconut Curry Sauce

Cooking Method:

1. For The Peanut Coconut Curry Sauce: chop the garlic, onions, pepper and red chilli. Blend them to make coarse paste with lemon juice, curry powder, peanuts and a little water.

2. Heat the oil in a pan. Add the blended coarse paste. Stir and cook for about 5 mins. Add the salt and mix well.

3. Add the coconut milk. Bring it to boil and simmer for few mins.

4. Add the all vegetables and some water (depends how you want the sauce thicker). Simmer for 12-15 mins covering the lid. Stir in between.

Serve vegetables in peanut coconut curry sauce hot with jasmine rice.

Variation Tips:

You can also add vegetables like green peas, baby corn, chopped aubergine, etc… to make vegetables in peanut coconut curry sauce.

You can use the thai curry paste, grind with peanuts and curry powder (or discard) and discard all other ingredients we use to make the paste for vegetables in peanut coconut curry sauce.

Tandoori Aloo Recipe is a delicious potato side dish. Tandoori Aloo Recipe is baked baby potatoes marinade in spicy tandoori yogurt.

Cooking Time: Appr. 30 Minutes (Baking) + 15 Minutes (Boiling)
Serves: 4-5 People

Tandoori Aloo Recipe

Ingredients:

1 kg baby potatoes
1 tablespoon garlic-ginger paste
4-5 tablespoon yogurt
1 tablespoon tandoori masala powder
1 teaspoon cumin powder
½ teaspoon garam masala powder
½ teaspoon red chilli powder
½ teaspoon turmeric powder
1 tablespoon oil
Chopped fresh coriander leaves
Salt to taste
Water as needed

Tandoori Aloo Recipe

Cooking Method:

1. Peel the potatoes. Boil them in salted water for 15-20 mins.

2. In a mixing bowl add the yogurt, tandoori masala powder, garlic-ginger paste and salt. Wisk it.

3. Heat the oil in a pan. Add the turmeric powder and turn the heat off. Add the chilli powder and stir it.

4. Pour this over to yogurt mix after few mins and mix well.

5. Now add the yogurt mix to the parboiled potatoes and marinate for 3-4 hours or overnight.

6. Grease the baking tray or any ovenproof tray or line in the tray with aluminium foil.

7. Bake the tandoori aloo on preheated oven at 220 degree C for 10-15 mins.

8. Flip the tandoori aloo and bake for further 10-15 mins.

9. Garnish tandoori aloo recipe with chopped fresh coriander leaves.

Serve tandoori aloo recipe as a side dish with some dipping sauce or as it is.

Aloo Paneer Paratha Recipe is stuffed with mashed potato, crumbled paneer (cottage cheese) and spices.

Cooking Time:Appr. 30 Minutes
Serves:4 People

Aloo Paneer Paratha

Ingredients:

For the Paratha Dough:

2 cups Whole Wheat Flour
2 tablespoon oil
2 teaspoon salt
Warm water from paneer as needed

For the Filling:

½ litter milk
1 large boiled and mashed potato
1 small onion
2 Green Chillies
½ inch ginger
½ teaspoon turmeric powder
1 teaspoon Garam Masala
2-3 tablespoon Lemon Juice
1 teaspoon amchur powder (dried mango powder)
7-8 chopped mint leaves
1 tablespoon chopped coriander
1 teaspoon oil
Salt to taste
Oil/Ghee for shallow frying the aloo paneer Paratha
Flour for dusting

How To Cook Aloo Paneer Paratha Recipe:

1. For the Filling: boil the milk in a pan. When milk starts boiling, add lemon juice and boil for few mins.

2. When the milk curdles, strain its extract with a muslin cotton cloth. Keep the water aside to make dough for aloo paneer paratha and hang paneer on a tap for half an hour. Paneer (cottage cheese) and water will be separated this point. Run the cold water on muslin cotton cloth for 15 secs and squeeze the water out.

3. Peel the ginger and chop it. Chop the chillies finely. Chop the onion finely.

4. Heat the oil in a pan and add chopped ginger and chillies. Stir for a minute. Add chopped onions and cook until it gets transparent.

5. Add turmeric powder, garam masala, salt, chopped mint leaves and amchur powder. Stir well and cook for few mins.

6. Add mashed potato and crumbled paneer. Mix well and cook for few mins. Turn the heat off and add chopped coriander and mix well.

7 For the Dough: Take flour and mix in salt and oil. Slowly add the warm water of paneer when required and make stiff dough (same as chapatti dough). Cover and keep it aside for at least half an hour.

8. For the aloo paneer paratha: Knead the dough again for few mins and make equal tennis ball sized balls.

9. Roll this dough ball in the flour dusting and roll them using a rolling pin into thick 3 times bigger than original dough ball size.

10. Place about 1 full teaspoon of aloo paneer filling in the centre. Cover and seal the ends by pressing with your hand and roll again, dusting flour if necessary. See the picture above. Roll until it gets 4 times bigger than original dough ball size.

11. Heat the tawa/wide frying pan at high flame and lower it to low-medium flame.

12. Place the stuffed paneer paratha on the tawa/wide frying pan and cook on both the sides till its cooked and brown spots start to appear on top. Spread a little oil/ghee both side. Finish cooking all aloo paneer paratha.

Serve aloo paneer paratha recipe hot with any curry or with plain yogurt or raita or with any curry you like.
