Egg Bhurji is scrambled egg curry. Egg Bhurji Recipe is also called anda bhurji.

Cooking Time: Appr. 20 Minutes
Serves: 2 People

Egg BhurjiIngredients:

3 large onions
3 large tomatos
3 eggs
1 teaspoon garlic paste
1 teaspoon chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
½ teaspoon garam masala
1 star anise
½ inch cinnamon stick
1 tablespoon chopped coriander
1 tablespoon oil
Salt to taste

Cooking Method:

1. Chop the onions and tomatoes

2. Heat the oil in the pan and add star anise and cinnamon stick.

3. Now add garlic paste and then chopped onions. Cook it for 7 mins, stir in between.

4. Add chopped tomatoes and cook it for 5 mins.

5. Now add turmeric powder, chilli powder, coriander powder, garam powder and salt and cook it for 5 mins. Keep stirring in between.

6. Now break the eggs and pour in the pan and keep stirring. So it can scramble properly and mix with spices. Cook until egg is cooked.

7. Now turn off the heat and garnish with chopped coriander.

Serve hot scrambled egg curry with Chapatti or Naan bread.
