Stuffed Baked Potatoes is stuffed with tangy cottage cheese (paneer) mix and marinade in masala yogurt. This is one the easiest stuffed potatoes recipe.

Cooking Time: Appr. 40 Minutes
Serves: 6 People

Stuffed Baked PotatoesIngredients:

6 large Potatoes
2 teaspoons Ginger paste
2 teaspoons Garlic paste
1 cup Yogurt
1 teaspoon Garam masala powder
1 teaspoon Red chilli powder
2 tablespoons chopped coriander leaves
1/2 cup grated Paneer (Cottage cheese)
2 teaspoons Chaat masala
2 Green chillies
10 raisins
Salt to taste
3 tablespoon Oil

How To Cook Stuffed Baked Potatoes:

1. Peel the potatoes. Heat 1 tablespoon oil in the non-stick pan or frying pan and cook potatoes until it golden brown. Cover the lid and keep stirring, so potato get golden brown colour all around.

2. Now scoop the potatoes out leaving a shell all around.

3. Heat oil in a pan; add one teaspoon ginger-garlic paste.

4. Mash the scooped out portion of the potatoes and add salt and let it cook on medium heat.

5. For marinade take yogurt in a bowl. Add salt, black salt, garam masala powder, red chilli powder, 1 tablespoons chopped coriander leaves, remaining 1 teaspoon ginger-garlic paste, olive oil and mix. Leave it aside.

6. Chop the green chillies and raisin.

7. For stuffing take paneer in a bowl. Add salt, chaat masala, remaining 1 tablespoon coriander leaves, chopped green chillies, chopped raisin and mashed potatoes and mix it.

8. Preheat oven to 220ºC.

9. Grease a baking tray. Stuff the potato shells generously with the paneer mixture. Put these stuffed potatoes in the yogurt marinade and mix well with a light hand. Let them stand for about thirty minutes.

10. Place the stuffed potatoes on the baking tray and keep the tray in the preheated oven and bake for 15-20 mins.

Serve this Stuffed Baked Potatoes hot as a starter or main with salad and sauce.
