Spinach Calzone Pizza is half-moon folded pizza, filled with spinach, broccoli, courgettes and cheese.

Coooking Time: Appr. 20 Minutes
Serves: 2-4 People

Spinach Calzone Pizza


For Calzone Pizza Dough:

1 cup warm water
1 teaspoon sugar
2 teaspoons dried yeast
2 cup plain flour
1 teaspoon salt
1 tablespoon olive oil

For Calzone Pizza Fillings:

6-7 tablespoon tomato sauce for pizza base
Or 6 tablespoon green pesto
1 small broccoli, cut in small or medium florets
500g spinach, chopped finely
2-3 courgettes, chopped
2 garlic cloves, finely chopped
1 green chilli, finely chopped
2 tablespoon olive oil
½ cup grated Parmesan cheese (Grana Padano)
½ cup grated cheddar cheese
Salt and freshly crushed pepper to taste
Plain flour or semolina flour for dusting

Spinach Calzone Recipe

Cooking Method:

1. To make calzone pizza dough, take the warm water in a bowl. Add the sugar and sprinkle the dried yeast in top. Stir to dissolve the sugar and yeast with the water. Set aside for 10-15 minutes or until frothy.

2. Take the flour and add salt into a bowl using sieve and add the oil and the yeast liquid. Draw together into one mass using floured hands to make deep dish pizza dough.

3. Tip the dough onto the work surface and begin to knead, by pushing the dough away with one hand and then drawing back towards you. Keep repeating this process for 5 mins until dough is smooth and elastic form. Kneading is most important for perfect calzone pizza dough. Making pizza dough from scratch is not difficult as long as the pizza dough gets enough kneading.

4. Place the dough in a bowl, cover with the lid/plate or cling film and leave in a warm place for at least an hour. It will be double in size.

5. For calzone fillings: Heat the oil in a pan, add chopped garlic and chilli. Stir them for 30 secs. Add the broccoli florets and chopped courgettes and stir and cook for 3-4 mins. Add chopped spinach and cook for further 3-4 mins. Cook on high heat, so all water absorbed. Add salt and pepper to taste and mix well. Add both grated cheese and mix well. Turn the heat off.

6. After an hour start kneading the dough again on work surface for 2 mins and divide the dough into two small balls (or 4 to make small spinach calzone pizza).

7. Rolling out the pizza dough, sprinkle some wheat flour or semolina flour on work surface. Place the dough ball on the sprinkled flour. Sprinkle some flour on the top of the dough ball. Now start tapping from your hand on clockwise. Leave other hand on the edge of the rolling dough on left side to make sure it rolls and round in shape. If you see any part of rolling pizza base is thick, tap there or stretch to make it thinner. Roll until pizza get around 15 “ size. You can use rolling pin to roll the pizza.

8. For calzone fillings, before start filling the pizza, divide calzone fillings in two or four portions depends how many calzone pizza you are making.

9. Place the pizza in a baking tray. Spread the tomato sauce or pesto evenly on the pizza in the middle leaving the half inch pizza edges, spread the calzone fillings on half side of the rolled dough. Fold the rolled dough over and fold and crease the edges to seal the calzone pizza.

10. Bake the spinach calzone pizza in a preheated oven at 230 degree Celsius for about 15-20 mins (preheat the oven for 15 mins and make sure oven is fully heated before baking the pizza).

Serve the spinach calzone recipe hot as a main course.
