Spicy Aubergine Slices (Spicy Eggplant Recipe) are great starter for aubergine lovers.

Cooking Time: Appr. 10 Minutes
Serves: 3-4 People

Spicy Aubergine


2 big fat aubergines (eggplant, baigan)
4 garlic cloves (lahsun)
1 inch ginger (adrak)
1 green chilli (add extra for extra spiciness) – Hari mirch
1 teaspoon red chilli powder (lal mirch powder)
½ teaspoon turmeric powder (haldi powder)
1 tablespoon coriander powder (dhania powder)
1 teaspoon vinegar (sarka)
2 tablespoon chopped coriander (hara kata dhania)
1 tablespoon lemon juice (nimbu ka ras)
3-4 tablespoon tomato puree
2 tablespoon olive oil
1 tablespoon chopped coriander for garnishing (hara kata dhania)
Salt to taste
Oil for shallow frying (optional for grilling)

Spicy Eggplant Recipe

How To Cook Spicy Aubergine Slices (Spicy Eggplant Recipe):

1. Mix all ingredients from above list apart of aubergines (eggplant), chopped coriander for garnish and oil for shallow frying to make smooth spice paste using grinder or blender.

2. Wash aubergines (eggplants), wipe and cut the stem. Now cut in round slice around ½ inches thicker.

3. Spread the spice paste on aubergine slices (eggplant slices) evenly and keep aside for at least half an hour to marinade.

4. Heat the oil in a frying pan and fry spicy aubergine slices (eggplant slices) both side until it turn to brown on medium heat.

Or grill all spicy aubergine slices (eggplant slices) on medium heat until it turn to brown on both side.

5. Garnish spicy eggplant recipe with chopped coriander.

Serve spicy eggplant recipe hot as a starter with salad as it is.
