Ridge Gourd Curry is also called turiya nu shaak in Gujarati. This ridge gourd curry recipe is cooked with tomatoes and sev (fried gram flour noodles).

Serves: 2 People

Ridge Gourd Curry

Ingredients:

2 medium ridge gourds (turiya or luffa)
½ cup sev (fried gram flour noodles)
2 medium tomatoes
2 garlic cloves
1 teaspoon chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon mustard seeds
2 tablespoon oil
Salt to taste

1. Peel the ridge gourd (turiya or luffa) on the bumpy lines and chop it.

2. Chop the tomatoes and garlic cloves.

3. Heat the oil in a pan and add mustard seeds. When seeds crackle, add chopped ridge gourd and cook covering the lid or 10 mins. Stir in between.

4. Add chopped garlic and cook again with covering the lid for 2 mins.

5. Now add chopped tomatoes, chilli powder, turmeric powder, coriander powder and salt. Mix well and cook for 5-7 mins.

6. Check the tomatoes and ridge gourd are cooked or not. If it is not cooked, cook for few more mins or until cooked otherwise add the sev (fried gram flour noodles) and mix well.

7. Finally turn off the heat.

Serve ridge gourd curry recipe with chapatti or paratha.
