Red Lentil Curry is a healthy lentil curry recipe. This lentil curry recipe is very easy to digest and full of flavours.

Red Lentil Curry

Ingredients:

1 cup red lentil (masoor dal)
1 large red onion
2-3 garlic cloves
1 inch ginger
1 fresh red chilli
2 tablespoon chopped coriander
1 teaspoon cumin seeds
½ teaspoon mustard seeds
¼ teaspoon asafoetida
½ teaspoon red chilli powder
½ teaspoon turmeric powder
2 teaspoon coriander powder
2 tablespoon oil
Salt to taste
Water as needed

Red Lentil Curry Recipe

Cooking Method:

1. Wash and soak the red lentil (masoor dal) for at least half an hour under the hot or warm water.

2. Chop the onion finely.

3. Peel and grate the ginger. Grate or mince the garlics.

4. Chop the fresh red chilli finely.

5. Heat the oil in a pan. Add the cumin seeds and mustard seeds. When cumin seeds crackle, add asafoetida.

6. Add the grated ginger, grated or mince garlic and chopped red chilli. Stir continuously for few mins.
Add 1 tablespoon chopped coriander leaves (keep aside the remaining chopped coriander for garnishing) and stir for a minute.

7. Add chopped onion. Keep stirring and cook until onions are brown.

8. Add red chilli powder, turmeric powder and coriander powder. Stir well and cook for a minute.

9. Add the soaked red lentil (masoor dal) and salt. Stir continuously to avoid sticking to the bottom of the pan. Cook for 5-8 mins.

10. Add some water (about 1½ cup) and bring it to boil. Simmer red lentil curry for 15 mins or until the red lentil (masoor dal) is cooked. Add more water, if the red lentil curry gets dried.

11. Finally turn the heat off. Garnish red lentil curry recipe with remaining chopped coriander.

Serve the red lentil curry hot with naan bread, chapatti, paratha or rice.
