Rajgira Puri is made from rajgira flour (Amaranth Flour) and normally eaten during fasting. Rajgira Puri is gluten free puri (gluten free deep fried flat bread). Rajgira is known as god’s grain or royal grain. Rajgira (amaranth flour) is a good source of dietary fibre and minerals such as iron, magnesium, phosphorus, copper and especially manganese. If you like gluten free fry bread, make the puri from this gluten free amaranth flour.

Cooking Time: Appr. 10 Minutes
Serves: 2-3 People

Rajgira Puri (Amaranth Flour Puri)


1 cup Rajgira flour (Amaranth flour)
2 medium sized boiled potatoes
1 tablespoon ghee
Warm water as or if needed
Salt to taste
Ghee/oil for deep frying puris

Cooking Method:

1. Mash the boiled potatoes.

2. Take the rajgira atta, mashed boiled potatoes and salt and knead well. Add the sufficient water I(if you need to) and knead again.

3. Add the ghee and knead. Make stiff dough. Divide the dough into 10-12 equal portions for puris.

4. Roll with rolling pin to make puri around 3 inches big. If you struggle to roll, spread some ghee/oil to ease of rolling.

5. Heat the ghee/oil and deep fry the rajgira puri till golden brown.

6. Place the rajgira puri in a kitchen paper to absorb the excess oil. Finish rolling and frying all puris.

Serve Rajgira Puri hot with any upwas sabji.
