Ragda Patties is spicy Potato Patties serve with peas curry, chopped salad, chutneys and chaat masala. Ragda Patties recipe is a chaat recipe. It is also known as Aloo Tikki Chaat, Ragda Pattice or Ragada Patties.

Serves: 6-7 People

Ragda Patties (Aloo Tikki Chaat)Ingredients:

For the Ragda Recipe:

1 cup dried green or white peas
1 large boiled and mashed potato
½ teaspoon mustard seeds
1 teaspoon grated ginger
¼ teaspoon asafoetida (hing powder)
1 teaspoon chilli powder
¼ teaspoon turmeric powder
1 teaspoon coriander powder
Salt to taste
1 tablespoon oil

For the Aloo Tikki Recipe (Potatoes Patties):

6-7 large potatoes
2 chopped green chillies
1 teaspoon grated ginger
1 tablespoon chopped coriander leaves
1 teaspoon garam masala
1 teaspoon chaat masala
1 tablespoon lemon juice
½ teaspoon turmeric powder
2 tablespoon corn flour
1 teaspoon sugar
Salt to taste
Oil for shallow frying

For Ragda Patties Garnish:

1 chopped onion
1 chopped tomato
1 cup sev (fried gram flour noodles)
1 tablespoon chopped coriander leaves
Chaat masala to sprinkle

Potatoes Patties (Aloo Tikki)Cooking Method:

1. For ragda recipe, soak the dried green or white peas overnight. Wash and drain it, boil with water until the peas are soft and mushy.

2. Heat the oil in a pan. Add the mustard seeds and asafoetida.

3. When mustard seeds crackle, add grated ginger, red chilli powder, turmeric powder and coriander powder. Stir for a minute.

4. Add boiled peas and mashed potato, mix well. Add some water and mix well mashing the peas slightly to get thicker gravy. Cook for 10 minutes on slow to medium heat and keep aside.

5. How to make aloo tikki (potato pattice): Boil the potatoes, peel and mash it.

6. Add all the ingredients listed in aloo tiki and knead it to mix it well. Divide into 12-14 equal portions and keep aside.

7. Roll out each portion in your palm and press gently to make tikki shape like 1st picture. Finish making all potato patties.

8. Shallow fry on a non-stick pan or tawa till the patties are golden brown and crisp.

9. How to make ragda patties, place 2 potato patties or as many as you want to serve on a plate and pour the ragda all over on the potato pattice.

10. Sprinkle chopped onion, chopped tomato, chopped coriander leaves, sev and chaat masala.

Serve ragda patties adding some chutney on it.
