200g of cooked chicken meat
2 tsp. Tablespoons of sunflower oil
250g broccoli florets chopped in height
45g cashew nuts coarsely chopped
2 tsp. Coffee grated fresh ginger root
1 clove garlic, finely minced
4 tbsp. Chopped mango chutney
Pepper
4 chapatis

Method of preparation:

Remove the skin from chicken and then expand it into small pieces.

In a large skillet, heat oil over medium heat. Saute broccoli, cashew, ginger and garlic 5 minutes, stirring often.

Add chicken, chutney and pepper. Stir for 2 minutes, until the chicken is hot.

Meanwhile, turn on the broiler. Remove the chapatis on the oven rack and sprinkle them lightly with water. Bake them for 2 minutes under the grill, turning gently after 1 minute.

Divide the chicken mixture on chapatis, then roll them before serving, although hot, accompanied by very cool raita.

Variation Tips:

• Replace the broccoli florets with small bouquets of cauliflower.

• Tortillas Mexican chicken and broccoli: Replace chapatis by 8 small tortillas. Instead of raita, prepare an express salsa by mixing 4 ripe tomatoes, peeled, seeded and diced with 1 small onion finely chopped, 1 or 2 tsp. tablespoons finely chopped fresh cilantro, a squeeze of lemon (yellow or green), a few drops of Tabasco, salt and pepper. Prepare the chicken mixture and broccoli (steps 2 and 3), removing the ginger chutney, and replacing cashews by pine. In a nonstick skillet, warm the tortillas dry 20 seconds on each side over medium heat. Divide the previous preparation and salsa over, roll and serve.
