Pumpkin And Butternut Squash Soup is made from pumpkin, butternut squash, onions, garlic and herbs. This soup is one of the healthiest veg soup recipe.

Serves: 3-4 People

Pumpkin And Butternut Squash Soup

Ingredients:

1 butternut squash
1 cup chopped pumpkin
1 onion
4 garlic cloves
½ teaspoon nutmeg powder
1 teaspoon olive oil
1 cube vegetable stock
1 knorr herb infusion pot (Bay, Thyme & Parsley)
Some chopped fresh parsley for garnishing
Salt and freshly crushed black pepper

Cooking Method:

1. Peel the butternut squash, remove the seeds and dice it.

2. Chop the onions and garlic.

3. Boil the butternut squash, chopped pumpkin, onion and garlic for pumpkin butternut squash soup until cooked.

4. Add the oil, vegetable stock and knorr herb infusion pot to the boil vegetables and bring it to boil.

5. Now blend to make smooth pumpkin butternut squash soup. Bring this healthy butternut squash soup to boil again and simmer.

6. Add nutmeg powder, salt and crushed black pepper to the pumpkin and butternut squash soup and simmer for 10 mins.

7. Finally turn the heat off and garnish pumpkin and butternut squash soup with chopped parsley.

Serve this healthy butternut squash soup warm with warm bread rolls as it is.

Variation Tips:

You can add different fresh herbs instead using knorr herb infusion pot (Bay, Thyme & Parsley) to this pumpkin and butternut squash soup.
