Prawn Fried Rice is quick and easy fried rice recipe, if you are using precooked or left over rice.

Cooking Time: Appr. 35 Minutes
Serves: 4 People

Prawn Fried RiceIngredients:

For Prawn Fry:

20 cleaned and washed king prawn
1 teaspoon minced garlic
1 teaspoon minced ginger
1 bunch spring onion
2 green chilli (optional)
1 teaspoon red chilli powder
1 teaspoon soya sauce
1 teaspoon vinegar
½ teaspoon sugar
1 tablespoon tomato ketchup
1 teaspoon sesame oil (or peanut oil)
Salt to taste

For Rice: Optional If You have already Cooked Leftover Rice

1 cup of basmati rice (you can use any rice)
1 teaspoon salt
3 cups of water

For Prawns Fried Rice:

1 bunch of spring onions
1 cup chopped vegetables (onion and mixed peppers or whichever you want)
1 teaspoon vinegar
2 tablespoon soya sauce
1½ sesame oil (or peanut oil)
Spring onions green for garnish
Salt as required

How To Cook Rice: Optional If You have already Cooked Leftover Rice

1. Take the rice in one pan and wash it (pour water into the pan and take it out by keeping your hand on the edge of the pan).

2. Boil 3 cups of water in the kettle and add into the rice pan.

3. Keep the pan on the full heat and add salt.

4. Cook it for 10-12 mins on full heat. It will need stirring in between.

5. Check rice taking one in your finger (be careful, it will be too warm) and pressing it. If it soft, it’s cooked.

6. Now place all rice into the sieve, all water will be filtered from the rice. Leave for 2-3 mins to get rid of all water.

How To Cook Prawn Fry:

1. Wash and clean king prawn.

2. Marinade the cleaned prawns in tomato ketchup, vinegar, soya sauce, sugar, salt and red chilli powder for 20 at least mins. This marinade can be also used in prawn masala fry.

3. Mince the garlic and ginger.

4. Chop the spring onions and green chillies.

5. Heat oil in a pan or wok properly, swirl it all over. Add the minced garlic and ginger and stir for a few seconds.

6. Add the chopped spring onion (keep some spring onions for garnish aside) and green chillies, cook for 2 mins, keep stirring.

7. Add the marinated prawns along with any leftover marinating and cook on high heat for a minute without stirring it.

8. Flip the other side and cook for another minute.

9. Mix all once again and cook on medium heat for 3 mins or till done, keep stirring. Sprinkle some salt on it.

10. Finally turn off the heat.

How To Cook Prawn Fried Rice:

1. Heat sesame oil (or peanut oil) in a large pan or wok and add the spring onions and stir fry for a minute.

2. Add the rest of the vegetables and stir and cook it on high heat for 3-4 mins

3. Add salt and soya sauce. Add the fried prawns and stir and cook a minute. Add the cooked rice and mix well.

4. Add vinegar and stir it for few secs.

5. Finally turn off the heat and garnish with chopped spring onion greens.

Serve hot this Prawn Fried Rice Recipe as side.
