Peanut Lemon Rice is also an easy leftover rice recipe using leftover rice. Peanut Lemon Rice Recipe is one of the quick and easy rice recipes.

Cooking Time: Appr. 15-20 Minutes
Serves: 2 people

Peanut Lemon RiceIngredients:

2 cup cooked leftover white rice
2 tablespoon grated coconut
3-4 dried red chillies
½ teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 tablespoon lemon juice
1/3 cup split peanuts
1 tablespoon oil or butter
4-5 curry leaves
Salt to taste

Cooking Method:

1. Heat the oil or butter in a pan and cook peanuts on slow heat. Once peanuts change colour to lightly brown, Take the peanuts out from the pan (make sure you only take the peanuts out not butter or oil) and keep aside for peanut rice.

2. Heat the same the pan again and add cumin seeds and mustard seeds. When it crackles, add curry leaves and dried red chillies.

3. In few seconds add grated coconut. Cook and stir for 3-4 mins

4. Then add turmeric powder and stir well.

5. Now add lemon juice and salt and. Mix it well.

6. Take the cooked leftover rice in a big bowl and press with your hand and fingers to make sure rice separate with each other.

7. Now add leftover rice and mix well until change colour to yellow colour.

8. Finally turn off the heat and add peanuts, mix well.

Serve hot this quick fried rice with curry, sauce or as it is.
