Paneer Dhansak Recipe is cooked with paneer (cottage paneer), pumpkin, lentils, dhansak masala and spices.

Paneer Dhansak Recipe


For Dhansak Gravy:

2 large Onions, finely chopped
3-4 large tomato, pureed
1 inch ginger
3 garlic cloves
1 green chilli
¼ teaspoon turmeric Powder
1 teaspoon chilli Powder
2 teaspoon coriander powder
1 teaspoon garam masala powder
2 tablespoon oil
1 teaspoon fennel seeds
1 bay leaf
Salt to taste

Lentils and Vegetables:

1 cup chopped pumpkin
¼ cup chopped fenugreek leaves (methi leaves)
¼ cup chopped spinach leaves
¼ cup chopped coriander leaves
350 gram paneer (cottage cheese)
2 tablespoon toor dal
2 tablespoon masoor dal
2 tablespoon channa dal
2 tablespoon black eye peas
2 tablespoon val dal
2 tablespoon puy lentil

For the Dhansak Masala:

1 teaspoon cumin seeds
½ teaspoon whole black Pepper
1 teaspoon coriander seeds
1 dried red chilli or chilli flakes
½ teaspoon sesame seeds
½ teaspoon fennel seeds

Dhansak Recipe

Cooking Method:

1. Soak all dals together for 4-5 hours in hot water.

2. Dry roast everything separately from dhanshak masala list and grind it adding a little water to make coarse paste. Keep the dhanshak masala paste aside.

3. Pressure cook all the lentils with water for 4 whistles or until they are cooked. You can cook in a pan until it is cook with water but it will take longer to cook.

4. Boil the chopped pumpkin, chopped fenugreek leaves (methi leaves), chopped spinach leaves and chopped coriander leaves until pumpkin is cooked.

5. Grind the green chilli, ginger and garlic cloves to a fine paste. Keep it aside.

6. Cut the paneer in rectangle pieces and deep fry until golden brown.

7. Heat the oil in a pan and add fennel seeds and bay leaf. When the fennel seeds crackle, add finely chopped onions. Stir and sauté till golden brown, stirring continuously.

8. Add ginger- garlic and chilli paste and sauté for some 3-4 mins.

9. Add tomato puree, dhansak masala and all the spices. Cook till oil separates on sides from the masala.

10. Now add the cooked lentils (dals) and boiled pumpkin with the green veggies. Mix well

11. Now add fried paneer, salt and water if needed. Mix well and simmer the paneer dhansak recipe for 5 mins.

12. Finally turn off the heat.

Serve paneer dhansak recipe hot with chapatti, paratha or rice.

Variation Tips:

You can use all different types of lentils and beans to make dhansak recipe.

For vegetable dhansak recipe, add 1 chopped carrot, some chopped beans, chopped potato or your choice of vegetables. Boil them along with chopped pumpkin and green veggies. Then follow the above steps to make vegetable dhansak recipe.

The ingredient list looks long but dhansak recipe is very easy to cook once all ingredients are in place.
