Paneer Corn Masala Curry is cooked with paneer (cottage cheese) and sweet corn in spicy gravy.

Cooking Time: Appr. 30 Minutes
Serves: 3-4 People

Paneer Corn Masala Curry


350g paneer (cottage cheese)
1 cup sweet corn
2 onions
3 tomatoes
3-4 garlic cloves
1 inch ginger
1 bay leaf
1 small cinnamon stick
4-5 cardamoms
2 cloves
1 teaspoon chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
½ cup yogurt
1 teaspoon sugar
2 tablespoon oil
1 tablespoon broken cashew nuts
1 tablespoon poppy seeds
4-5 tablespoon warm milk
1 tablespoon chopped coriander leaves
Salt to taste
Water as needed

Paneer Corn

Cooking Method:

1. Soak the cashew nuts and poppy seeds in warm milk for 30 mins. Grind to make paste.

2. Cut paneer in small rectangle or square pieces. Heat the frying pan and cook all paneer pieces cook it both side until it golden brown (without oil). Keep aside.

3. Boil the sweet corn and keep aside.

4. Chop the onions, garlic, ginger and tomatoes.

5. Heat 1 tablespoon of oil in a pan. Add chopped garlic and ginger. Sauté them for a minute.

6. Add the chopped onions and cook until they are transparent. Stir occasionally.

7. Add chopped tomatoes and cook for further 3-4 mins.

8. Now grind this onions and tomatoes to make smooth paste.

9. Heat the remaining oil in a pan and bay leaf, cinnamon stick, cardamoms and cloves.
In a minute add the onion-tomato paste. Cook and simmer for 2 mins.

10. Add the chilli powder, coriander powder, turmeric powder and salt. Simmer for 3 to 4 minutes.

11. Add the yogurt, cashew nut paste, sugar and salt and simmer till the gravy thickens. Add some water or as much as you want in gravy.

12. Add the fried paneer pieces and corn. Mix well and simmer for further few mins.

13. Finally turn the heat off and garnish paneer corn masala curry with chopped coriander.

Serve paneer corn masala curry hot with naan bread, paratha or rice.
