Onion Fried Rice is an easy leftover rice recipe using leftover rice. Onion Fried Rice is one of the quick and easy rice recipes.

Cooking Time: Appr. 15 Minutes
Serves: 2 people

Onion Fried RiceIngredients:

2 cup cooked leftover white rice
2 large onions
2 green chillies
½ teaspoon turmeric powder (Optional)
1 teaspoon cumin seeds
1 teaspoon sugar
4-5 peanuts
1 tablespoon lemon juice
1 tablespoon oil or butter
4-5 curry leaves
1 tablespoon chopped coriander for garnish
Salt to salt

Cooking Method:

1. Chop the onion and green chilies.

2. Heat the oil in the pan and add cumin seeds. When it crackles, add chopped chillies.

3. Now add curry leaves.

4. In few seconds add chopped onion and stir and cook it for 5-7 mins.

5. Then add turmeric powder and stir well.

6. Now add lemon juice, salt and sugar. Mix it well.

7. Take the cooked leftover in a big bowl and press with your hand and fingers to make sure rice separate with each other.

8. Now add cooked leftover rice and mix well until change colour to yellow colour.

9. Finally turn off the heat and garnish with chopped coriander.

Serve hot this quick fried rice with curry, sauce or as it is.
