Moong Curry (Mung Curry) is made from green whole moong beans (mung beans) with tomatoes and ground spices. Moong beans (mung beans)are very nutritious and healthy. Moong beans (mung beans)are also very easy to digest.

Cooking Time: Appr. 30 Minutes
Serves: 2 People

Moong Curry (Mung Curry)

Ingredients:

1 cup whole moong beans (mung beans)
3 tomatoes
1 inch ginger
1 teaspoon cumin seeds
½ teaspoon mustard seeds
¼ teaspoon asafoetida
1 teaspoon red chilli powder
½ teaspoon turmeric powder
2 teaspoon coriander powder
1 teaspoon garam masala powder
2 tablespoon oil
Salt to taste
Water as needed
Ginger strips or chopped coriander for garnishing

Moong Curry Recipe

Cooking Method:

1. Soak the green moong beans (mung beans)overnight or at least 5-6 hours, if you wish to boil in a pan but if you are using pressure cooker, there is no necessary to soak it (but it is up to you).
Wash the moong beans (mung beans) and cook with 3 cup water for 4-5 whistles in pressure cooker or boil in a pan until moong beans (mung beans) cooked and look mushy.

2. Peel the ginger and chopped finely.

3. Chop the tomatoes and keep in a bowl. Add chilli powder, turmeric powder, coriander powder and salt. Mix well.

4. Heat the oil in a pan. Add cumin and mustard seeds. When seeds crackle, add asafoetida. Then add chopped ginger. Stir for a minute.

5. Add tomatoes and spice mix. Cook for about 5 mins or until oil get separated from the spices.

6. Add boiled green moong beans (mung beans) and garam masala. Mix well and cook mung bean curry for 2 mins.

7. Add some water to moong curry recipe and cook until water gets absorbed.

8. Finally turn off the heat and garnish with ginger strips or chopped coriander.

Serve Moong Curry (Mung Curry) hot with chapatti, paratha or rice.
