Methi Thepla is normally eaten as a breakfast with cup of tea in the monsoon morning in India. This Methi thepla recipe also called methi ka paratha and Methi paratha recipe.

Cooking Time: Appr. 25 Minutes
Serves: 4-5 People

Methi TheplaIngredients:

2 gram wheat flour
1 gram gram flour (besan)
4 tablespoon chopped fresh fenugreek leaves
2 tablespoon chopped coriander (optional)
2 green chillies (optional)
½ cup yogurt
1 teaspoon chilli powder
½ teaspoon turmeric powder
1 tablespoon oil
Salt to taste
Water as needed

Cooking Method:

1. Chop the chillies.

2. Boil the water in the kettle for the dough of paratha.

3. Take flour in one big bowl. Add chilli powder, turmeric powder, salt and mix it.

4. Now add chopped chillies, fenugreek and coriander and mix it.

5. Make the hole in the middle of the flour and add oil and mix it with spoon. Make a hole again, add yogurt and mix it.

6. Now make one hole again in the middle of the flour. Add some boiled water and mix it with spoon as it will be too warm to touch with hand.

7. Add some more water and keep mixing with spoon. Do not add too much water as you need to maintain the consistency to form the mix.

8. After few mins you can use your hand to mix it properly and make it smooth dough. All flour should be turned into dough.

9. Now take a small bit, a size of a lemon. Press in between your hands and dip both sides in the wheat flour.

10. Roll on the rolling pin (roller). When you get double size of the original size, fold it and fold it again. It will quarter size of round. Now press it and sprinkle some flour and keep rolling. It will nicely shape in triangle shape. Although you can just roll round like chapatti.

11. Keep rolling until it gets 3 times bigger than original dough size.

12. Heat the heavy based frying pan.

13. Gently lift the paratha and put in the heated pan. Turn it over in 15 secs. Add the oil with the spoon on the edge of the paratha and spread some on the top side, cook it for 30 secs or until it cooked that side. Now again turn it over and cook it for another 15 secs or until it cooked another side.

14. Now take it out from the pan and do the same with the rest of the dough. It normally takes around 1-2 mins to cook one paratha.

Serve hot Triangle Methi Thepla with raita, yogurt, pickle, any curry or even with cup of tea.
