Meatballs In Coconut Curry Sauce is meatballs are cooked in creamy coconut curry sauce in oven.

Cooking Time: Appr. 25-30 Minutes
Serves: 2 People

Meatballs In Coconut Curry Sauce

Ingredients:

350g mince lamb
2 spring rosemary
2 teaspoon garlic paste
2 teaspoon ginger paste
1 teaspoon lemon juice
2-3 green chillies
1 canned coconut milk
2 tablespoon curry powder
1 cube chicken stock
Salt to taste

Meatballs In Coconut Curry Sauce

Cooking Method:

1. Preheat the oven at 180 Degree C.

2. Chop the rosemary leaves and chilli finely.

3. Add the finely chopped rosemary and chilli to the mince lamb. Add the salt, lemon juice, 1 teaspoon garlic paste and 1 teaspoon ginger paste. Mix well and roll into small balls.

4. Place the meatballs in a shallow ovenproof dish or in casserole.

5. Take some coconut milk in a small bowl and dissolve the curry powder.

6. Heat the coconut milk in a pan. Add the remaining garlic and ginger paste. Add the dissolved curry powder. Break the chicken stock cube in pieces and add to the coconut milk. Add salt to the coconut milk and simmer for 5 mins.

7. Pour the coconut curry sauce to the meat balls.

8. Cover the ovenproof dish with kitchen foil or casserole with the lid. Bake the meatballs in coconut curry sauce for 25-30 mins in preheated oven at 180 degree C.

Serve meatballs in coconut curry sauce hot with flat breads or breads.
