Maru Bhajia is very famous crispy potato bhajia served with maru bhajia chutney in Maru’s Bhajia House, Ealing Road, Wembley, London. Maru bhajia is basically nylon potato bhajia cooked until it gets crispy and served with special maru chutney which is made with tomato, cucumber, green chilli, etc…. Here is maru bhajia recipe.

Cooking Time: Appr. 4-5 Minutes Per Batch
Serves: 4-5 People

Maru Bhajia Recipe (Crispy Potato Bhajia)

Ingredients:

500g potatoes
200g Gram flour (chickpea flour, besan)
80g plain flour
1 tablespoon corn flour
4-5 green chillies (or to taste)
3 tablespoon lemon juice
4 large cloves garlic, crushed
4-5 tablespoon finely chopped fresh coriander
½ teaspoon carom seeds
2 teaspoon turmeric powder
1 tablespoon sugar
Cold water
Salt to taste
Oil for deep frying

Maru Bhajia Recipe (Crispy Potato Bhajia)

Cooking Method:

1. Remove the blemish from the potatoes, slice them thinly without peeling. Soak them in cold salted water.

2. Chop the chilli finely and crush the garlic.

3. After half an hour leave the potato slices in a colander for 3-4 mins to get rid of the water.

4. In a small bowl, add the gram flour (besan, chickpea flour), plain flour, corn flour, turmeric powder, salt, sugar and carom seeds. Mix well.

5. In a large mixing bowl, squeeze and add all potato slices. Add the lemon juice, chopped chillies, chopped coriander and crushed garlic. Mix well with potato slices. Now add the dried flour mix to the potato slices. Mix them until the flour is coated to the potato slices. Don’t add water just keep it dry. The lemon juice and water from the potato is enough for this batter. Keep mixing until all potato slices coated with batter.

6. Deep fry the potato bhajiya until golden brown and crispy. Place them in kitchen paper to get rid of access oil.

Serve maru bhajiya hot with maru bhajia chutney (cucumber tomato relish).
