Kheer (Indian Rice Pudding) is very famous dessert from Indian cuisine. Kheer is cooked in almost in every home in India.

Cooking Time: Appr. 45 Minutes
Serves: 4-5 People

Kheer (Indian Rice Pudding)


1 cup broken rice (or any)
6 cups semi-skimmed milk
1 cup water
¼ cup raisins or sultanas
¼ cup sugar or to taste
½ teaspoon nutmeg powder
½ teaspoon cardamom powder
¼ cup single cream (Optional)

Kheer Rice Pudding

Cooking Method:

1. Take the milk and water in a large heavy bottom pan and bring it to boil. Take 2 tablespoon of warm milk and soak the saffron in the milk.

2. Meanwhile wash the rice and drain the water.

3. Add the rice to the pan. When the rice boils and come up, lower the heat down. Simmer it until the rice is soft and cooked (probably takes 30-45 mins). Stir continuously to avoid rice and milk sticking to the pan.
When the rice will be cooked, the milk will be half or less in the quantity. Now add the soaked saffron and cook for 2-3 mins.

4. Add the sugar, nutmeg powder, cardamom powder and raisins or sultanas. Stir and cook until sugar dissolved.

5. Add the single cream and stir well and turn the heat off.

6. Garnish the kheer (indian rice pudding) with some dry fruits before serving.

Serve kheer (indian rice pudding) warm or chilled as a dessert.

Variation Tips:

You can add other dry fruits like almond, cashew nuts, pistachios to kheer recipe (indian rice pudding recipe), if you want to.

You can add the rose essence, rose water or vanilla essence to the kheer recipe (indian rice pudding recipe) at the end to get different flavour.
