Handvo Recipe is savoury rice and lentil cake snack recipe original from Gujarat. Handvo can be baked in oven or cooked on stove top.

Cooking Time: Appr. 50 Minutes
Serves: 4-5 People

Handvo Recipe


¾ cup rice
¼ cup chana dal (split yellow peas)
1 tablespoon urad dal (split black lentils)
¼ cup sour yogurt
1 teaspoon ginger paste
2-3 chopped green chillies
¾ cup grated bottle gourd (doodhi, lauki)
1 bunch of methi (fenugreek), chopped
¼ cup chopped coriander
¼ cup roughly crushed green peas
1 tablespoon lemon juice
1 teaspoon baking powder or soda bi carb
½ teaspoon chilli powder
½ teaspoon turmeric powder
1 teaspoon mustard seeds
½ teaspoon carom seeds (ajwain)
¼ teaspoon asafoetida
Salt to taste


Cooking Method:

1. Wash and soak all dals and rice under the water for at least 4 hours. Drain and keep aside.
Blend them to a coarse paste.

2. Take the handvo paste to a bowl and add the yogurt. Mix well. Cover it and keep aside to ferment for at least 6 hours or overnight.

3. Heat a teaspoon in a pan. Turn the heat off, wait for few secs and add chilli powder. Add this mix to handvo and mix well.

4. Add the grated bottle gourd, lemon juice, sugar, chopped methi, chopped coriander, green peas, baking powder or soda bi carb, carom seeds, turmeric powder, chopped green chilli, ginger paste and salt and mix well. Keep aside.

5. Heat the remaining oil in a pan and add the mustard seeds. When seeds crackle, turn the heat off. Add asafoetida and sesame seeds. Keep stirring for few secs.

6. Spread the oil in a baking tray.

7. Pour the batter into the baking tray, leave the tray empty at least an inch for raising the handvo. Add the tempting on the top and spread it.

5. Now cover with kitchen foil (aluminium foil) and bake the handvo in a preheated oven at 180 degree c for 40 mins.

6. After 40 mins, if there is no golden crust in handvo, take the foil off and bake the handvo for 5-8 mins or until it get golden brown. Let the handvo stand for 10 mins before serving.

7. Cut in square pieces to serve.

Serve the handvo hot with green chutney.

Variation Tips:

You can make handvo with crushed sweet corns, grated courgette or any vegetables you like.

You can make handvo flour by grinding rice and dals and store it to use it whenever you want to make handvo.

To make handvo on stove top: Follow the step No. 3 for tempting using half of the ingredients with extra 1 teaspoon oil in a wide non-stick pan Spread the tempting evenly and add half the batter to the pan (not the tempting to the batter). Pour half the batter evenly to make a thick layer. Cover and cook on a low heat for 7 to 8 minutes or until the base turns to golden brown and crisp. Lift the handvo gently using 2 large flat spoons and flip it. Cover and cook on a low heat for further 5 to 7 minutes or till it turns golden brown. Cool slightly and cut into square pieces. Repeat this process to make to finish half handvo batter.

  1. I love eating Handvo but never made it at home, in gujarat always I use to eat delicious handvo and always thought its only made in a handvo maker but now I am happy will try your baked version :)!

    • I used to cook handvo in a non-stick frying pan in two batches. I tried first time the baked version in the oven and it works. Oven has made some jobs so much easy and healthy. Enjoy it. 🙂
