Gherkin Toasted Sandwich is pickled cucumber sandwich. It is ideal for breakfast or light lunch.

Cooking Time: Appr. 10 Minutes
Serves: 2 people

Gherkin Toasted SandwichIngredients:

4 slices of bread
1 tablespoon chopped coriander (cilantro)
3 gherkins (pickled baby cucumber)
½ cup of grated cheese
1 green chilli

Cooking Method:

1. Toast the breads in the toaster (optional).

2. Chop the chilli and coriander.

3. Cut gherkins vertically in 2 halves.

4. Grate the cheese and mix chopped chilli and coriander with grated cheese.

5. Place gherkin (pickled baby cucumber) halves on the bread (toast). 3 halves will be enough on each bread (toast).

6. Now place the cheese mix on the bread (toast) evenly and cover with another bread (toast).

7. Grill this sandwich in the healthy grill or in the sandwich toaster.

Serve this grilled gherkin coriander cheese sandwich hot with chutney or cup of tea or coffee
