Fresh Tomato And Basil Soup is cooked with roasted red onion and green peppers.

Cooking Time: Appr. 30 Minutes
Serves: 3-4 People

Fresh Tomato And Basil SoupIngredients:

1 kg tomatoes
1 large red onion
2 green peppers (bell peppers)
1 cup fresh basil
2 vegetable stock cubes
¼ teaspoon chilli flakes
1 tablespoon coriander powder
1 teaspoon crushed black pepper
2 tablespoon olive oil
¼ cup cream
Salt to taste
Water as needed

Fresh Tomato And Basil Soup RecipeCooking Method:

1. Preheat the oven to 220 degrees Celsius.

2. Chop the green peppers, onion and tomatoes.

3. To make tomato basil soup, mix all chopped vegetables with crushed black peppers, garlic cloves, salt, chilli flakes and oil in a baking tray. Bake it for 20-25 mins.

4. Chop the basil leaves.

5. Take out roasted vegetables from the oven and place in to the pan. Add some water and vegetable stock and bring it to boil. Simmer tomatoe basil soup for 5 mins.

6. Now add cream and chopped basil and blend to make smooth roasted tomato basil soup.

Serve creamy tomato soup recipe hot with bread rolls or as it.
