Egg Curry Recipe is hardboiled eggs cooked with indian spices.

Cooking Time: Appr. 30 Minutes
Serves: 2 People

Egg Curry Recipe


4 eggs
1 large red onion
1 teaspoon garlic-ginger paste
2 red tomatoes
½ teaspoon red chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
2 tablespoon oil
Water as needed
Salt to taste
Fresh chopped coriander for garnishing

Egg Curry

Cooking Method:

1. Boil the eggs until it is hardboiled. Peel them and give two lengthwise cut on opposite sides without separating in halves. Keep them whole.

2. Chop the onion and tomatoes finely.

3. Heat the oil in a pan on medium heat. Add the garlic-ginger paste, red chilli powder and turmeric powder. Stir for a minute.

4. Add the hardboiled eggs and stir for few mins. Now take the eggs out and add the chopped onions. Cook until transparent.

5. Add the chopped tomatoes. Stir and keep mashing them for 2-3 mins.

6. Now add the garam masala powder and salt. Mix well.

7. Add the water (about 1 cup) and bring it to boil. Simmer for 10 mins.

8. Add the fried hardboiled eggs and simmer egg curry recipe for 5 mins.

9. Garnish egg curry recipe with chopped fresh coriander.

Serve egg curry recipe hot with chapatti, paratha or rice.
