This Easy Ratatouille Recipe is a traditional French stewed vegetable dish.

Cooking Time: Appr. 30 Minutes
Serves: 2-3 People

Easy Ratatouille Recipe

Ingredients:

2 onions
5-6 garlic cloves
1 medium aubergine (eggplant)
1 red pepper (bell pepper)
1 yellow pepper (bell pepper)
2 courgettes (zucchini)
½ teaspoon chopped thyme leaves
4-5 red ripe tomatoes
1 tablespoon chopped basil leaves
Salt to taste
4 tablespoon olive oil
Freshly crushed black pepper as per taste

French Ratatouille Recipe

Cooking Method:

1. Slice the onions and peppers. Chop the garlic.

2. Chop the courgettes (zucchini) in quarters (cut it in ½ inch slice and then chop in 4 pieces).

3. Chop the aubergine (eggplant) in quarters (cut it in ½ inch slice and then chop in 4 pieces).

4. Heat the oil in a large pan. Add the onion slices and garlic to the pan.

5. Cook the onion slices, stirring occasionally, until they are transparent about 5-7 mins.

6. Add the eggplant pieces and thyme to the pan and continue to cook, stirring occasionally, until the eggplant is half cooked, about 5-7 mins.

7. Add the green and red peppers, zucchini and continue to cook for further 5 mins.

8. Add the tomatoes, chopped basil, salt and crushed black pepper. Cook french ratatouille recipe for further 5 minutes. Stir well the Ratatouille Food.

9. Finally turn the heat off.

Serve ratatouille dish hot or warm as side or main dish.

Variation Tips:

Each vegetables can be cooked separately and then mix with herbs, salt, pepper and tomatoes to make easy ratatouille recipe.

Aubergine (eggplant) and courgettes (zucchini) can be baked with drizzle olive oil for 10-15 mins at 220 degree C and then mixed with other cooked vegetables to make eggplant ratatouille and baked ratatouille recipe.
