Dum Aloo is very popular north indian recipe. Dum Aloo recipe is also called Kashmiri Dum Aloo Recipe.

Cooking Time: App. 45 Minutes
Serves: 3 People

Dum AlooIngredients:

10 baby Potatoes
2 large Onion
10 cashew nuts
100 ml plain yogurt
4 cloves
2 bay leaves
4 green cardamoms
1 tablespoon fresh cream
Salt to taste
Oil for deep frying

For Potato Stuffing:

15 cashew nuts
10 raisins
2 green chillies
Salt to taste

For the paste:

3 medium tomatoes
4 garlic cloves
50 gram ginger
½ teaspoon turmeric powder
2 red chillies (dried or fresh)
1 ½ tablespoon coriander seeds (or 1 ½ teaspoon coriander powder)
1 teaspoon cumin seeds (jeera)

Cooking Method:

1. Peel the baby potatoes and keep in salty water for at least 2 hours.

2. Cut the onions in 2 halves and boil with 10 cashew nuts.

3. Now grind onions and cashew nuts and make smooth paste.

4. For Potato stuffing: Crush cashew nuts, cut green chillies and raisin in very fine pieces. Add a pinch of salt and mix all together.

5. Take potatoes out from salty water after 2 hours and wipe with kitchen towel and make it dried.

6. Now heat the oil in the pan and deep fry potatoes until it gets golden brown.

7. Wait until it cools down then make small hole with toothpick and take some potato mash out from the middle of potato. Now fill the cashew nut stuffing in the middle of potato and close the potato with the potato mash.

8. Cut the tomatoes; add garlic cloves, ginger, turmeric powder, red chillies, cumin seeds and coriander and grind it.

9. Now heat one tablespoon oil in the pan and add cloves, bay leaves and cardamoms.

10. Now add tomato paste and cook it for 5 mins then add onion paste and cook it for another 5-7 stirring in between.

11. Now add stuffed potatoes, salt, water (if you want to) and whisked plain yogurt. Cook it for 4-5 mins and then turn the heat off.

12. Finally add some cream on the top.

Serve hot with Naan bread or chapatti or rice.
