Dudhi Halwa is Sweet Bottle gourd Pudding. Bottle gourd is called Dudhi in Gujarati and Lauki in Hindi. So, Dudhi Halwa is also called Lauki Halwa.

Dudhi Halwa (Sweet Bottle gourd Pudding)Cooking Time: Appr. 35 Minutes
Serves: 4-5 People


1 long Dudhi (bottle gourd)
¾ cup sugar
1 cup milk
½ teaspoon cinnamon powder
½ teaspoon nutmeg powder
1 teaspoon cardamom powder
3 tablespoon Ghee (clarified butter)
10 cashew nuts

Dudhi Halwa (Sweet Bottle gourd Pudding)Cooking Method:

1. Wash the dudhi (bottle gourd), peel and grate it. Remove the seed, if it has any seeds in.

2. Split the cashew nuts in two from the cut.

3. Heat the ghee in a pan and add doodhi to it.

4. Keep cooking and stirring on a medium low flame until the doodhi starts to change colour slightly.

5. Now add Milk and Sugar. Let it cook and keep stirring until all the milk is absorbed and the doodhi halwa starts to leave ghee from the sides again.

6. Add Cardamom powder, nutmeg powder and cinnamon powder. Mix well.

7. Now add some cashew nuts and leave some for garnish. Stir it for 2-3 mins.

8. Finally turn of the heat and garnish lauki ka halwa with split cashew nuts.

Serve lauki halwa recipe hot or chilled as a pudding (dessert).
