Chicken Mushroom Casserole Recipe with dumplings is a creamy and rich autumn recipe.

Chicken Mushroom Casserole Recipe


For The Chicken Mushroom Casserole Recipe:

3 chicken breasts
1 pack of mushrooms cut in halves
2 tablespoons plain flour, seasoned with salt and pepper
3 tablespoons olive oil
1 large spring of thyme
350ml apple cider (dry or medium)
150ml double cream
1 tablespoon butter
2 teaspoons English mustard
1 bay leaf
1 tablespoon chopped parsley
Sea salt and freshly crushed black pepper

For The Dumplings:

250g self-raising flour
125g really cold butter
Freshly crushed black pepper
2×2 inch cheese cube

Mushroom Casserole Recipe

Cooking Method:

1. Dust the chicken breast with the seasoned flour. Heat 2 tablespoons of the oil in a large frying pan on medium heat. Fry the chicken breasts until it turn brown. Transfer the chicken to a casserole dish or pan.

2. Add about 150ml cider to the frying pan, letting it bubble for 2 mins as scrape up the bits from the bottom. Pour over the chicken casserole and top up with more cider as necessary.

3. Heat the butter in another pan, add the mushrooms and sauté gently until the juices run. Add the mushroom with juices to the chicken. Add the bay leaf and the thyme among the chicken and bring to a simmer. Cook uncovered or partially covered, on low heat preheated oven to 140°C about ½ hour, until the chicken is cooked through and tender.

4. Take the flour in a mixing bowl. Grate the cold butter and cheese into flour using grater. Add a pinch crushed pepper. Gently rub the butter into the flour using your finger until it begins to resemble breadcrumbs. Add a splash of cold water to help bind it into dough. Divide the dough into 12 pieces and gently roll each into a round dumpling.

5. Remove the bay leaf and thyme. Pour the juices off into a pan from the chicken casserole, leaving the chicken and mushrooms in the casserole. Whisk the cream and mustard into the juices and bring to a simmer. Season with sea salt and freshly crushed black pepper, then pour back over the chicken.

6. Place the dumplings on top of chicken mushroom casserole and press down lightly so that they’re half submerged. Cook in the oven for 30 minutes.

7. Finally garnish with chopped parsley before serving.
