Cheesy Baked Aubergine (Eggplant) is a great delicious starter or a side dish.

Cooking Time: Appr. 25 Minutes
Serves: 2-3 People

Cheesy Baked AubergineIngredients:

1 big and thick aubergine (eggplant)
2 medium red tomatoes
2 garlic cloves
1 teaspoon chilli powder
½ teaspoon sugar
1 teaspoon soya sauce
1 teaspoon vinegar
1 tablespoon olive oil
½ cup grated cheese
Salt to taste

How To Cook Cheesy Baked Aubergine (Eggplant):

1. Peel the tomato skin and cut in small pieces.

2. Grind the tomato with garlic, chilli powder, sugar, soya sauce, vinegar, olive oil and salt together. Make the thick smooth tomato sauce paste.

3. Cook the tomato sauce until it get thicker. Keep stirring.

4. Wash the aubergine (eggplant) and cut about ½ inch thick into round slice.

5. Preheat the oven at 220 degree Celsius.

6. Spread the tomato sauce on aubergine slice. Finish topping all the aubergine (eggplant) slices.

7. Place all the aubergine (eggplant) in a baking tray.

8. Bake the aubergine for 15 mins.

9. Grate the cheese for the topping.

10. Take all slices out from the oven after baking eggplant slices for 15 mins and cover aubergine (eggplant) evenly with the grated cheese. Bake all cheese covered baked aubergine for further 5 mins.

11. Finally take the baked eggplant out from the oven. Your Cheesy baked Aubergine (Eggplant) slices are ready to serve!
