Carrot Peas Rice is simple rice recipe cooked with carrots and peas. This colourful rice recipe is perfect for the kids.

Cooking Time: Appr. 10 Minutes
Serves: 2-3 People

Carrot Peas Rice

Ingredients:

1 cup cooked leftover rice
2 medium carrots
½ cup green peas
¼ cup sweet corn (optional)
1 teaspoon cumin seeds (jeera)
2 tablespoon ghee (clarified butter)
Salt to taste
Water as needed

Cooking Method:

1. This step is only if you are cooking carrot peas rice recipe with fresh cooked ]rice and you don’t have leftover rice. Pressure cook the basmati rice with water until half-cooked and each grain separate with salt and water. You can cook basmati rice in a pan and drain access water in the drainer. Run the cold water over the rice in the drainer and leave the rice to drain. This helps rice not to over cook in the steam.

2. Peel the carrots and chop in small length pieces.

3. Heat the ghee (clarified butter) in a large heavy bottomed pan.

4. Add the cumin seeds. When the cumin seeds crackle, add chopped carrots, sweet corns and green peas. Sprinkle the salt and cook for 5 mins, keep stirring in between.

5. Add the cooked leftover rice or fresh cooked basmati rice and mix well gently the rice with peas and carrots.

6. Cook carrot peas rice for a minute on low heat and keep stirring gently the rice with peas and carrots.

7. Finally turn the heat off.

Serve carrot peas rice hot with choice of curry or with dal.
