Cabbage Carrot Curry is simple dry curry, cooked with cabbage, carrots, chillies and some ground spices. This cabbage carrot curry is normally eaten as a side curry dish along with other main dish.

Cooking Time: Appr. 15-20 Minutes
Serves: 3-4 People

Cabbage Carrot Curry

Ingredients:

1 half cabbage
4 medium carrots
2 green chillies
½ teaspoon mustard seeds
½ teaspoon cumin seeds
¼ teaspoon asafoetida
2 tablespoon oil
¾ teaspoon turmeric powder
Salt to taste

Cooking Method:

1. Chop the cabbage. Peel the carrots and cut in long thin strips (2-3 inches long). Keep all vegetable in the water.

2. Chop the chillies.

3. Heat the oil in a pan. Add mustard seeds and cumin seeds. When seeds crackle, add asafoetida.

4. Now add the vegetables and stir well. Cove the lid and keep shaking every 2 mins. So steam water goes into the pan and same time vegetables will be stirred. Cook for 5 mins on low heat.

5. Add chopped chilled to the pan. Cove the lid and keep shaking every 2 mins. So steam water goes into the pan and same time vegetables will be stirred. Cook the cabbage carrot curry for further 5 mins on low heat.

6. Add the turmeric powder and salt. Cove the lid and keep shaking every 2 mins. So steam water goes into the pan and same time vegetables will be stirred. Cook the cabbage carrot curry for further 5 mins on low heat.

7. Finally turn the heat off.

Serve cabbage carrot curry hot with chapatti or paratha.
