Broccoli Spinach Strata is a baked layered with spinach, broccoli, bread cubes, eggs and cheese. Strata is an American dish similar to a quiche or frittata.

Cooking Time: Appr. 40-50 Minutes
Serves: 2-3 People

Broccoli Spinach Strata


300g baby leaf spinach
1 small broccoli
2 leeks
1 tablespoon sunflower oil
4-5 bread slices
4 large eggs
3-4 tablespoon milk
1 cup grated mature cheddar
2 teaspoon French mustard
Salt to taste

Broccoli Spinach Strata

Cooking Method:

1. Preheat the oven at 180 degree C.

2. Cut the leeks lengthwise. Chop finely the white and pale green part only.

3. Cut the broccoli in small florets.

4. Melt the butter and oil in a pan, add the chopped leeks and stir well. Cover and cook on low heat for 5 mins. Stir in between.

5. Add the broccoli florets. Cover and cook on low heat for 5 mins. Stir in between.

6. Add the baby spinach leaves and salt to taste. Cook and stir till it wilts.

7. Cut the bread in 2cm cubes and put them on the base of oven-proof dish. Keep some aside for the top.

8. Place the vegetables on the top of the bread cubes evenly.

9. Add evenly the grated mature cheddar.

10. Beat the egg with milk and French mustard. Pour over the cheese topping.

11. Put the remaining bread cubes on the top of the broccoli spinach strata.

12. Bake broccoli spinach strata for 40-50 mins or until the top is golden.

Serve broccoli spinach strata hot with any side dish or as a side dish.
