Bean Sprouts Curry is cooked with sprouted red mung beans (moong beans) with the onions, tomatoes and spices.

Cooking Time: Appr. 30 Minutes
Serves: 2 People

Bean Sprouts Curry

Ingredients:

1 cup red mung bean (moong bean)
2 onions
2 garlic cloves
3 large tomatoes
1 teaspoon mustard seeds
1 teaspoon red chilli powder
2 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon garam masala powder
3 tablespoon oil
Water as needed
Salt to taste

Cooking Method:

1. How to grow bean sprouts: Soak the bean under the water in a large bowl overnight. Drain the water and rinse again. Wrap the beans in a wet tea towel or muslin and set them in a colander, in a dark place (low light) but moisture with some air circulation. I keep under the sink cupboard in my kitchen. The beans will sprout in a day and continue to grow. I normally keep for 24 hours for bean sprouts curry. Rinse the beans once or twice a day during the summer time, this will help to keep bean moisture and won’t let them dry. Do not move the beans as they need to stay where they are to form a mass. Rinse the beans under slow tap water pressure or immerse the sprouts colander in a vessel filled with water and lifting it to rinse.

2. Chop the onions, crush the garlic and chop the tomatoes.

3. Heat the oil in a pan. Add mustard seeds. When seeds crackle, add chopped onions. Sauté the chopped onions for 3-4 mins.

4. Add the crushed garlic and bean sprouts. Stir and cook for 2-3 mins.

5. Add chopped tomatoes. Stir and cook until tomatoes are cooked.

6. Add all spices and cover the lid. Cook until oil separated on sides. Let the steam go into the pan when you lift the lid for stirring. Keep stirring every minute or minute and half to avoid bean sprouts sticking to the pan.

7. Now add salt and water. Bing bean sprouts curry to boil and let it cook on medium heat for 15 mins.

8. Take one bean in your finger and press to check it is cooked or not. If it is cooked, you can turn the heat on high and cook until the gravy reduces (as much as you want). If it is not cooked, let it cooked until bean sprouts are cooked.

9. Finally turn the heat off. Garnish the bean sprouts curry with chopped coriander.

Serve bean sprouts curry hot with chapatti, paratha or rice.

Variation Tips:

You can boil the bean sprouts before cooking bean sprouts curry. You don’t need to cook 15 mins, cook for 5-7 mins with the spices. It will reduce the cooking time of the curry.
