Baked Cauliflower Cheese is creamy and crispy baked cauliflower in mature cheddar sauce.

Coking Time: Appr. 25-30 Minutes
Serves: 2-3 People

Baked Cauliflower Cheese

Ingredients:

1 cauliflower head
600g whole milk
50g butter
50g plain flour
2 bay leaves
4-5 peppercorns
3-4 cloves
1 cup grated mature cheddar cheese
A pinch of nutmeg powder
Salt and pepper to taste
Water as needed

Baked Cauliflower Cheese

Cooking Method:

1. Cut the cauliflower into florets. Boil with water for 5 mins.

2. Cheese sauce for Baked Cauliflower Cheese:

3. Bring the milk to boil in a pan. Add peppercorns, cloves and bay leaves. Boil for 2-3 mins.

4. Turn the heat off and allow infusing whole spice into milk for 15 minutes. Strain the milk.

5. Heat the butter in a pan and flour, stirring continuously for 5 mins.

6. Add the milk little by little continuously whisking until add all milk. So there are no lumps.

7. Bring it to the boil and simmer for 5 min on low heat.

8. Add half cup of grated mature cheddar and simmer for 15 minutes.

9. Season the cheddar sauce with nutmeg powder, salt (if required) and crushed black/white pepper powder.

10. Pour the sauce over the cauliflower in a casserole or baking tray, Sprinkle the remaining grated mature cheddar and bake the cauliflower cheese for 25-30 mins.

Serve baked cauliflower cheese hot with side of your choice.
