Aubergine Potato Curry is also called baingan aloo or aloo baingan. It is a simple side dish and can be used as a main dish as well.

Cooking time: App. 30 Minutes
Serves: 3 people

Aubergine Potato CurryIngredients:

3 medium size potatoes
1 Aubergine
1 teaspoon mustard seeds
1 teaspoon red chilli powder
1 tablespoon coriander powder
½ teaspoon turmeric powder
1 tablespoon chopped coriander
2 medium tomatoes
1 tablespoon oil
Salt to taste
Water as needed

How To Cook Aubergine Potato Curry:

1. Peel the potatoes and cut in small cubes.

2. Cut the Aubergine in small cubes.

3. Heat the oil in the pan and add mustard seeds and wait until it crackles.

4. Now add the potatoes and aubergine cubes and cook it for 2-3 mins.

5. Chop the tomatoes and add it.

6. Now add the chopped tomatoes and cook it for 2 mins.

7. Then add the chilli powder, turmeric powder, coriander powder and salt. Mix it and cook it for 10-12 mins.

8. Now add a half cup of water and cook it for another 8-10 mins with covering lid.

9. Finally, turn the heat off and garnish aubergine potato curry with coriander.

Serve hot aubergine potato curry with Naan bread or Chapatti or rice as a side or main dish.
