Aloo Bhindi Recipe is a simple side dish made with okra and potatoes.

Cooking Time: Appr. 20 Minutes

300g fresh okra (bhindi)
2 medium potatoes
2 tomatoes
2 green chillies
½ teaspoon fenugreek seeds
½ teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
2 tablespoon oil
Salt to taste

How To Cook Aloo Bhindi Recipe:

1. Wash the okra and pat dry it. Cut the both ends and chop the okra.

2. Peel the potatoes and chop it. Chop the green chillies and tomatoes.

3. Heat the oil in pan. Add the mustard and fenugreek seeds. When the seeds crackle, add the chopped potatoes. Stir in between and cook for 4-5 mins.

4. Add the chopped okra (bhindi) and chopped green chillies. Cook for further 5 mins. Stir in between gently.

5. Add the chopped tomatoes and cook for 2-3 mins. Stir in between gently.

6. Add the turmeric powder, coriander powder and salt to taste. Cook for 3-4 mins. Stir in between.

7. Finally turn the heat off and garnish aloo bhindi with chopped fresh coriander.

Serve aloo bhindi recipe as a side dish along with chapatti, paratha or rice.
